Analysis of the Development of School Healthy Canteen Guidelines for School Healthy Canteen Standards

One of the important components of the school health program is the existence of a healthy canteen that plays a role in providing safe, hygienic, and nutritious food for students. The safety of school snack food is still a serious concern considering the low understanding of snack providers in schools about healthy food and the lack of guidelines for healthy canteen requirements in schools. This study aimed to analyze the need for PATINSELAH (School Healthy Canteen Guidelines) as a tool in the management of healthy canteens in elementary schools. The research used a descriptive approach through observation, interviews, and questionnaire distribution and was conducted in 2 elementary schools in Jambi City. The respondents of this study were 22 food sellers in the canteen and 10 research informants including the principal, school health unit teachers, classroom teachers, the Education Department and the Health Department of Jambi City. The results showed that most of the knowledge of food sellers in canteens is in the good category. Knowledge about food hygiene and safety is quite good, but there are still limitations in the management and storage aspects of foodstuffs. The lack of guidelines for the management of healthy canteens causes schools and food sellers in the canteens to have difficulties in managing healthy canteens according to standards. This research produced PATINSELAH as a practical guide that is expected to help schools in improving the management of healthy canteens more systematically. The results of this research are expected to be advocacy material for stakeholders in the fields of education and health in supporting the implementation of sustainable healthy canteens.
